The cabinet is heavy-duty 12-gauge welded steel inside with a 22-gauge stainless exterior and mineral-wool insulation rated to 1,200 degrees, while a 65,000 BTU burner with electronic ignition runs on propane or natural gas. End loading lets you roll full racks straight in, and a thermostat range of 100 to 325 degrees with an upper-limit safety switch keeps long cooks dialed in.
